Uptown Turkey Sandwiches

Linguini and Broccoli

1 pkg (375 g) linguine, uncooked
1 tbsp (15 mL) olive or vegetable oil
1 clove garlic, minced
1/2 tsp (2.5 mL) dried basil leaves
4 cups (1 L) chopped fresh broccoli
1/2 cup (125 mL) dry sherry or ready-to-serve chicken broth
1/4 cup (50 mL) chopped fresh parsley
1/4 tsp (1 mL) ground black peper
1 cup (250 mL) lowfat cottage cheese
1/4 cup (50 mL) grated Parmesan cheese
  1. Cook linguine according to package directions; drain
  2. Meanwhile, in large skillet, heat oil. Add garlic and basil; cook 1 minute
  3. Add broccoli, sherry, parsley and pepper; cook, stirring constantly, until broccoli is tender
  4. Remove from heat; stir in cottage cheese
  5. Toss hot pasta with broccoli mixture; sprinkle with Parmesan cheese
