Chicken Sandwich Melt

4 slices 100% whole wheat bread
8.5 oz (250 g) boneless, skinless chicken breast, cooked and chopped
2 tbsp (30 mL) light mayonnaise or salad dressing
½ cup (125 mL) grated part skim mozzarella cheese
¼ cup (60 mL) minced green onion
  1. In a bowl, combine all ingredients except bread
  2. Spread all ingredients on bread to make 4 open-faced sandwiches
  3. Bake in oven for 20 minutes at 200°C (400°F)
  4. If desired, top with chopped dill pickles, lettuce, tomato or sprouts before serving
