Pasta with Zucchini and Tomatoes
| 1 package | 375g macaroni-type pasta (penne, Rotini or elbow) |
| 1 each | onion and garlic clove, finely chopped |
| 1 | zucchini, sliced |
| ¼ cup (60 mL) | olive oil |
| 12 | cherry tomatoes, cut in half |
| 2 tbsp (30 mL) | chopped fresh parsley or basil |
| salt and freshly ground pepper (to taste) | |
| grated parmesan cheese (to taste) |
- Cook pasta according to package directions
- Saute onion, garlic and zucchini in oil until tender
- Add tomatoes and parsley; heat through
- Season to taste with salt and pepper
- Toss pasta with vegetable mixture and serve topped with cheese
